We prepare our Cayenne extract from the fruits peppers of Certified Organic Capsicum annuum plants rated at 90,000 heat units. Our Cayenne is grown in India during the long, intensely-hot summer. The fruits are harvested only when fully ripened, then carefully shade-dried to retain their full color and aroma before being thoroughly extracted.
