We make our caramel in traditional copper kettles, 80 lbs, at a time. By using brown rice syrup, evaporate cane juice and natural vanilla we end up with a much less processed caramel. Most other caramels use corn syrup, white sugar and imitation vanilla. These ingredients normally go through chemical extractions, bleaching, and other processes that we have avoided in our caramel. Finally each piece is hand decorated with chocolate giving it an individual look.
